Sweet Chili Shrimp(Healthy Bake or Air Fry)
Makes: 2–4 servings

Ingredients

1 lb shrimp, peeled + deveined (tails off)

1 large egg white (or 2 tbsp plain Greek yogurt)

3/4 cup panko (use whole wheat if you want)

1/2 cup unsweetened shredded coconut (optional, but very “island”)

1 tsp garlic powder
-
1 tsp smoked paprika

1/2 tsp sea salt

1/2 tsp black pepper
-
Zest of 1 lime
Healthy sweet chili glaze

1/4 cup sweet chili sauce (look for lower sugar if you can)

1 tbsp rice vinegar or lime juice

1 tsp grated fresh ginger

1 tsp sesame oil (optional)

1–2 tsp sriracha or chili flakes (optional)
How to make it

Heat oven or air fryer

Oven: 425°F, line a sheet pan.

Air fryer: 400°F.

Cube-style bite setup

Chop shrimp into chunky pieces (each shrimp into 2–3 bites). This gives you that “cube” feel.

Coat

Mix panko + coconut (if using) + spices + lime zest in a bowl.

Toss shrimp in egg white (or Greek yogurt), then coat in the crumb mix. Press lightly so it sticks.

Oven: bake 8–10 minutes, flip once, until crisp and shrimp are just cooked.

Air fryer: 6–8 minutes, shake halfway.

Warm the glaze ingredients in a small pan 1–2 minutes.
